Bernard Baudry, now working with his son Matthieu, farms organically at Cravant-les-Côteaux. The bulk of this bottling comes from vines at Saint Louans on the plateau above Chinon's première côte, the principal parcel being Cimetière aux Chiens, named for the limestone that litters the ground. To this Baudry blends roughly 20 per cent from the gravelly soils of Cravant. Fermentation is with wild yeast in traditional cement vats, and the wine ages fifteen months in concrete and old casks before bottling unfiltered, two springs after harvest — a considerably longer cycle than the domaine once used.\u003c\/p\u003e\n\u003cp\u003eApproachable now and good for eight to ten years. Picking is by hand, fermentation runs 15 to 20 days in cement vats, and the wine is then held in cement until bottling two winters after the harvest, so it sees no oak at all. Baudry has taken the opposite approach. This organically farmed cuvée draws on two small parcels: 0.8 hectares behind the Château de Sonnay, propagated with cuttings taken from Domaine Huet in Vouvray, and the eroded limestone of La Croix Boissée, the site behind the domaine’s top red. In 2023 the oldest Chenin vines from La Croix Boissée also formed part of the blend. Matthieu Baudry presses slowly and gently, and the juice ferments on its own yeasts until dry, a quarter of it in concrete egg and the rest in old 500- and 600-litre barrels. Baudry planted here between 1993 and 2000, and the parcel also holds what is left of the estate's ungrafted vines, which once went into a separate Franc de Pied cuvée and are now blended in. The vineyards are farmed organically. Harvesting is by hand and yields never exceeded 40 hectolitres per hectare. Fermentation took place in large wooden fermenters with regular pigeage for gentle extraction, and after around twenty days on skins the wine was pressed off and matured twelve months in lightly seasoned oak barrels, then nine months in cement, and bottled without filtration.
