They are best known for grappa, and for the small copper stills they use, but the range also takes in gin, amaro and aperitivi drawn from the same Venetian drinking tradition. Airone Rosso belongs to that last group, an aperitivo built on an infusion of herbs, roots and citrus peel in the northern Italian style, made for mixing rather than sipping neat. Distillation is on a traditional Holstein still, and the aim throughout is to carry as much of the original fruit aromatic into the spirit as possible rather than to build character from cask.
