Most of the juice ferments naturally in tank, with some parcels taken through the estate's oval Doppelstück oak casks. Even at this level the wine is given six months on gross lees, there is no pumping, and added sulphur is kept very low. The style is dry in the German sense, close to bone dry on the finish, with the sandstone giving a rocky texture behind citrus-edged acidity and enough palate weight to carry it. The topsoil is deep and sandy over yellow sandstone bedrock, a combination that brings power, perfume and intense mineral freshness. The estate farms organically. The wine fermented naturally and spent ten months in a mixture of steel tanks and five-year-old 600-litre halbstück ovals, about a quarter of the volume; Martin Franzen finds that this, allied with extended lees ageing, gives a more expressive and less reductive wine that is approachable on release. A sandstone wall encloses the uppermost section and creates a warmer microclimate; the parcel faces south-east, warms quickly in the morning and cools soon after sunset thanks to the forest alongside. The soil is poorer than in the lower Bürgergarten, pure mottled yellow sandstone gravel with a high proportion of decomposed stone. Yields are held to a very low 35 hectolitres per hectare, and in most years about a third of the wine ferments and matures in 1,000-litre oak vessels.
