Col McBryde and Jennie Gardner pick by hand, destem and crush, then press to a mix of stainless steel and neutral barrique, four parts to one, and leave the indigenous yeasts to do the work. Once the ferment is dry the wine is stabilised and bottled, with nothing added to push the aromatics along. Arneis is a Piedmontese grape, grown mostly in Roero, and it repays this kind of hands-off handling with pear skin, almond and a chalky grip.\u003c\/p\u003e\n\u003cp\u003ePear, quince and blanched almond, with a saline finish and just enough weight to read savoury. Serve at 10 to 12 degrees.
