Fresh ocean breezes moderate the heat, and a mix of red and black clay over limestone and ancient sea-bed deposits gives the vines a cool, water-retentive root zone. Alain Graillot, who built his reputation at Crozes-Hermitage, consults on the project and has argued from the start that Morocco can produce Syrah of real perfume rather than merely of ripeness. The winemaking follows northern Rhône practice, with a focus on scent and juiciness rather than extraction, and the results have improved steadily as the vines have aged.\u003c\/p\u003e\n\u003cp\u003eDrinking well now and over the next five years.
