Amanda draws on Garnacha Tintorera—better known internationally as Alicante Bouschet—planted between 30 and 90 years ago on clay-calcareous and alluvial soils above 700 metres. It is one of the few red varieties with red flesh as well as red skin, so even a short maceration gives real colour. The fruit was fermented in steel on wild yeasts after around 20 hours on skins, then raised in tank rather than wood to protect the freshness and cut of the fruit.
