Alfredo Maestro sources this from a collection of pre-phylloxera-era plantings scattered across the Duero valley at 770 to 1,000 metres, on limestone and clay. Old vines at that altitude give small crops and slow ripening, which is what holds the acidity in a variety not naturally rich in it. The fruit is hand-harvested and destemmed, then given a short period on skins before a natural fermentation in stainless steel. There is no malolactic fermentation and no additions of any kind. In this release the earlier-picked parcels supply line and brightness while the later fruit brings texture and depth, producing a white with grip rather than obvious fruit sweetness.\u003c\/p\u003e\n\u003cp\u003eDrink now and over the next three to four years.
