Because a varietal Corvina falls outside the Valpolicella regulations, the wine has always been bottled as an IGT. It is a dry table wine rather than an appassimento wine, made from grapes picked and fermented in the ordinary way and then matured for a long period in French oak. First made in the 1980s, it helped establish the idea that the Veronese hills could produce a serious single-site red.\u003c\/p\u003e\n\n\u003cp\u003eServe at around 18 degrees with roast beef, game or mature hard cheeses, and decant it beforehand.
