That gives Pinot Noir colour and acidity it struggles to find in warmer places. Alois Lageder has farmed here since 1823 and now works its estate biodynamically, with a gravity-fed winery at Magrè built into the hillside. Mimuèt is fermented with a portion of whole bunches and matured in large oak, so the wood sits behind the fruit.\u003c\/p\u003e\u003cp\u003eServe at 15 to 16 degrees with duck, veal, mushrooms or a mature alpine cheese.
