Despite the colour in the bottle, maturation ran only twelve months before the spirit was judged ready for blending, dilution and hand bottling. No sugar or colour was added at any point. The barrel program at Kyneton has been running for years, and this is the release where the cask selection clicked.\u003c\/p\u003e\n\u003cp\u003eStraight up, layers of apricot, marmalade, cocoa butter and coconut give way to pear, pineapple and burnt sugar, with heat and spice around a firm structure. Add water or ice and chocolate-orange, herbs and vanilla come forward.
