Cervaro was first made in 1985, blending Chardonnay with a small proportion of Grechetto, the native Umbrian white that gives the wine its local accent. Fermentation takes place in French oak barriques, with malolactic conversion and an extended period on lees, a Burgundian approach that was close to unheard of in Italy at the time.
