A field of varieties is used here, among them Sauvignon Blanc, Sémillon, Traminer, Riesling and Grechetto, picked in successive passes through the vineyard as the rot takes hold bunch by bunch rather than all at once. Fermentation and ageing take place in small oak barrels.
