The old dry-grown bush vines of McLaren Vale, particularly on the Blewitt Springs sands, give perfumed, medium-weight reds. Welkin is an old word for the sky, in keeping with the winery's astronomical names. Fermentation is with whole bunches and native yeast, ageing in older oak.\u003c\/p\u003e\u003cp\u003eServe slightly cool at 16 degrees with roast lamb, charcuterie or roast vegetables.
