The estate is farmed organically and is best known for its still Saumur Blanc and Saumur-Champigny. Crémant de Loire requires whole-bunch pressing, a second fermentation in bottle and at least twelve months on lees, and Lambert's version is built almost entirely on Chenin Blanc, which brings the appellation's characteristic quince, chalk and high natural acidity, with a small addition of Chardonnay softening the attack.
