The hill is a mound of Turonian tuffeau limestone, in places with a clay and flint cap, and each clos behaves slightly differently according to its depth of soil and its exposure. Fruit is picked by hand, whole bunch pressed, fermented with indigenous yeast and raised for an extended period on fine lees in seasoned barrel and larger wood.
