Breze is Turonian tuffeau limestone, the soft white rock the local cellars are quarried into, covered thinly with clay and flint; the individual clos differ mainly in soil depth and exposure. The Chenin Blanc is hand picked, whole bunch pressed, fermented with indigenous yeast and given a long elevage on fine lees in seasoned barrel and larger wood before being bottled dry.
