The hill is Turonian tuffeau limestone under a shallow cover of clay and flint, divided into historic walled parcels of which Midi is one. The estate is certified organic, works its soils and picks by hand, then whole bunch presses, ferments with indigenous yeast and raises the wine on fine lees in seasoned barrel and larger wood, with no new oak signature.
