Arnaud Lambert farms from Saint-Cyr-en-Bourg on the tuffeau plateau south of the Loire, home of his family's Domaine de Saint-Just, and he also farms the historic vineyards of Château de Brézé. Each parcel is picked and vinified on its own, and this bottling is tiny, amounting to three barrels. Fruit is harvested by hand from organically farmed vines, pressed whole-bunch and fermented with indigenous yeasts, then aged on fine lees in seasoned wood for an extended élevage before bottling.
