The slope is a low limestone ridge under a thin skin of clay and flint, divided into walled clos. Arnaud Lambert farms from Saint-Cyr-en-Bourg on the tuffeau plateau south of the Loire, home of his family's Domaine de Saint-Just, and also works the historic vineyards of the Château de Brézé. He tends the vineyards organically, ploughing rather than spraying between rows, and vinifies each clos separately. The Chenin is pressed in whole bunches, fermented with indigenous yeasts and raised on its lees in older barrels, an approach meant to show the differences between the parcels rather than the winemaking.\u003c\/p\u003e\n\n\u003cp\u003eDry, fresh and open in its youth, it works with shellfish, poultry and creamy cheeses; serve at around 11 degrees.\u003c\/p\u003e\n\n\u003cp\u003e\u003cem\u003e*Every effort is made to ensure the current vintage is accurate; however, variations can occur.
