Arnaud Lambert farms from the village, home of his family's Domaine de Saint-Just, and also works the historic vineyards of the Château de Brézé. Chenin Blanc grown on shallow soil over cool, fractured limestone ripens slowly and holds its acidity, giving dry wines with tension rather than weight. The fruit is pressed in whole bunches, fermented with the vineyard's own yeasts and matured on lees in seasoned barrels, a restrained élevage that adds texture without pushing wood flavour into the wine.
