It is always the last site Arnaud Mortet picks. The soils are rocky and shallow, under 50 cm in places, and scattered with the flinty stones known locally as Gevrey silex, evidence of alluvial wash from the combe. Arnaud, who took over the domaine his father Denis built, destems all the fruit for this cuvée, roughly 30% of it by hand with the central stem removed by scissors so the berries stay whole, and raises the wine in about 30% new oak. Denis Mortet once described the archetype as solid at first, then increasingly slender and elegant.\u003c\/p\u003e\n\u003cp\u003eApproachable after five years and built to run for two decades.
