This cuvée comes from En Champs, Combe du Dessus and Aux Echézeaux. En Champs sits high on the slope near the Brochon boundary, just below the premier cru Champeaux at the northern end of what is sometimes called the Côte Saint-Jacques; it forms the backbone of Mortet’s Mes Cinq Terroirs and was once bottled on its own. Its vines are an extraordinary 120 years old and yield very little. Aux Echézeaux, on the Morey line, and Combe du Dessus, below Cazetiers, average around 80 years. The wine was fermented with sixty per cent hand-destemmed fruit and matured in thirty per cent new oak.\u003c\/p\u003e\n\u003cp\u003eGive it three to five years and expect it to hold for fifteen.
