Steve Matthiasson blends mature-vine Sauvignon Blanc from the estate vineyard in Oak Knoll alongside it. Both sites catch cool fog in the morning and a breeze off San Pablo Bay in the afternoon, which is what keeps the acid intact this far south. The parcels co-ferment naturally in barrel and rest ten months on fine lees in French oak, a quarter of it new, with no stirring.\u003c\/p\u003e\n\u003cp\u003eThree years in bottle before release has settled the Sauvignon's pungency and let Semillon's key lime and lemongrass take over. Citrus and blossom sit against honey and toasty spice, with fine texture woven through.
