The Reserve is a selection of the best fruit from the estate's preferred clones, traditionally led by D5V12, which founder Stephen George singled out after years of trial plantings. Winemaker Liam Van Pelt ferments it with wild yeast in small open vessels, includes some whole bunches, and matures it in French oak barriques with a higher share of new wood than its Estate sibling. The result is darker, denser and more firmly structured, with earthy spice and a tight line of acidity.\u003c\/p\u003e\n\u003cp\u003eDecant for half an hour if opening young, and pour at around 15 to 17 degrees. Good partners include roast pork belly, venison, duck with beetroot or aged hard cheese.
