The 2021 is only the second release from this site. It is built solely from the Dijon clones 115, 667 and 777, which tend to give bright fruit and fine structure, and the winery describes it as a high-energy wine. Cherry, red currant and plum stone lead the nose, and the palate opens with supple tannins and flowing acidity, finishing with grapefruit and juniper notes.\u003c\/p\u003e\n\u003cp\u003eDecant for half an hour and serve at around 15 to 17 degrees. It pairs well with roast duck, venison, beef carpaccio or a wild mushroom tart.
