Kotinga is planted to Dijon clones, and 2024 was a strong growing season in the district. Aromas of red jelly crystals, pomegranate, raspberry and aniseed open up to wild strawberry, cardamom and a hint of beeswax. Good fruit weight coats fine, structured tannins, giving a plush mid palate and a long, slowly unfolding finish.\u003c\/p\u003e\n\u003cp\u003eA gentle chill to around 15 degrees helps the aromatics. Serve with slow-roasted pork shoulder, duck and cherry, or grilled mushrooms with thyme.
