Old plots of it stayed put on Pico regardless, sheltered inside the currais, the low lava-rock corrals built to keep the wind off. Bunches are sorted on a table, crushed gently and moved without pumps; the must takes three to six hours of skin contact at low temperature before fermenting spontaneously at 12°C.\u003c\/p\u003e\n\u003cp\u003eCrushed strawberry and cream on the nose, then grapefruit pith and a firm saline edge with real texture behind it.
