Picking happens by hand into 40 kilogram baskets, with heavy sorting before anything reaches the press. There is no maceration at all: free-run juice goes straight into small stainless tanks and ferments on wild yeast.\u003c\/p\u003e\n\u003cp\u003eWild strawberry and blood orange lead, then iodine and oyster shell, with a long mineral finish.
