Babo, the project of Justin Bubb and his team, sources this wine from vineyards close to Castiglione Falletto, mainly facing south-west at between 300 and 400 metres. The 2021 season brought spring frosts that cut yields and a warm summer, but the fruit came in well at the end. Picking is by hand, the fruit is destemmed and macerated for about a week with pumpovers twice a day, and the wine is then held in concrete tanks for a short period only. Concrete keeps the red fruit bright and leaves the tannins firm but open rather than building structure for the long term.\u003c\/p\u003e\n\u003cp\u003eDrink over the next three to five years.
