Babo is the label of winemaker Justin Bubb, who draws this Pinot Gris from a thirty-year-old site at San Martino al Tagliamento, near Pordenone. The vineyard sits at the base of the Alps on a mix of clay and alpine gravel laid down by alluvial deposits. Friulian Pinot Grigio tends to carry more flesh and layering than the versions grown in Veneto or Trentino, and Bubb pushes that character further: the fruit is de-stemmed and crushed, then left in the press for about twenty-four hours, some eight of them in contact with the skins, before pressing begins.
