Babo is a recent arrival to the category. The wine is crafted from Garganega with a small parcel of Trebbiano di Soave, and after a gentle press and a short maceration on skins to build texture and complexity, Justin Bubb ferments the juice in stainless steel and matures the wine on light lees for five months. That regime gives a white with the almond and waxy character typical of Garganega and a saline, textured mouthfeel, without any oak. It is a smart first release, and like the rest of the Babo range it is made to be lively, versatile and easy to put on a table for a crowd.\u003c\/p\u003e\n\u003cp\u003eDrink over the next two to three years.
