It comes from 1.3 hectares of 20- to 50-year-old vines spread over four parcels in the Puligny area, plus a plot of younger Chassagne vines on chalky soil. Marc and Alexandre Bachelet farm these sites with the same attention they give their premiers crus, and the winemaking is deliberately hands-off: gentle pressing, spontaneous fermentation and ageing in 350-litre barrels rather than smaller pièces. The wine has good fruit, juicy freshness and just enough reduction to give it grip, and it is one of the more serious whites made at this level on the Côte.\u003c\/p\u003e\n\u003cp\u003eDrink over the next four or five years with grilled fish, roast vegetables or a soft goat's cheese.
