The name is said to derive from folles-terres, or crazy earth, a reference to the violent erosion these slopes suffer in heavy rain. Marc and Alexandre Bachelet farm around half a hectare in the lower, eastern pocket of the vineyard, next to Leflaive, where the soil is particularly rocky. The parcel is naturally low-yielding, giving tiny bunches with little juice, and Marc Bachelet notes that although the vines are only in their forties they behave as though twice that age. Winemaking follows the domaine's usual pattern of gentle pressing, spontaneous fermentation and ageing in 350-litre barrels, which keeps oak influence low and lets the site's delicacy stand.\u003c\/p\u003e\n\u003cp\u003eOpen from release or hold for five to ten years, with turbot, roast poultry or a young goat's cheese.
