'Von unserm' means 'from ours' and marks the estate-level wines in the VDP classification. According to the producer, the grapes are picked by hand and given a cold soak before a spontaneous fermentation of about three weeks in stainless steel. The wine then goes through malolactic conversion and matures for around 15 months, with a third of it in used oak barrels, before being bottled unfiltered.
