The producer notes that the grapes are selected by hand from a number of sites, fermented cool in stainless steel tanks, then left on the lees for about three months before the final blend is put together. No oak is used, which keeps the focus on fresh fruit and the firm acidity typical of the region. The wine is certified organic and comes in at around 12% alcohol.\u003c\/p\u003e\n\u003cp\u003ePour it straight from the fridge.
