That is the whole idea behind the museum program, and it is a generous one. The fruit comes from some of the oldest plantings on the property: Cabernet Sauvignon from 1976 and 1981, Merlot from 1981 and Shiraz from 1996, all rooted in dark, volcanic loam over a limestone base. Hand-picked and destemmed with a small whole-cluster portion, the wine saw a long maceration before twelve months in seasoned French barrels of various sizes. Aged Cabernet from this estate tends to keep its structure and freshness.\u003c\/p\u003e\n\u003cp\u003eSavoury and spicy with brambly fruit, baking spice and an iron-filing edge. The tannins are still lasting and the acid fresh, holding the early signs of maturity in balance through a long close.
