The Moorabool Valley west of Geelong is cool, windy and dry, on volcanic soils over limestone clays, and the wines carry a saline, stony grip as a result. The core blocks are Olive Tree Hill from 1976 and the Winery Block from 1981, both now old enough to crop very little. The estate is farmed organically.\u003c\/p\u003e\n\u003cp\u003eGrapefruit, white peach and a flinty, saline finish, with the lees adding breadth and the acid holding it all in line. Serve at 11 to 12 degrees, not straight from the fridge.
