Both older sites lie on volcanic soils over limestone clays, with vines averaging around thirty-five years, old enough to crop lightly and ripen slowly. Whole bunches were pressed and settled overnight, then wild-fermented mainly in 500-litre French oak hogsheads with a fifth new. Seventy per cent went through malolactic, and the wine sat ten months on lees with no stirring at all.\u003c\/p\u003e\n\u003cp\u003eLemon, grapefruit pith and white peach over a chalky, saline base, with lees weight and a long dry finish. Serve at 11 to 12 degrees and give it half an hour in the glass.
