Whole bunches were pressed and settled overnight, then wild-fermented in 500-litre French oak puncheons with a fifth new. Twelve months on lees followed, stirred only minimally, with no sulphur added until a small addition just before bottling in March 2018. Magnum format and museum release together mean this has developed about as slowly as a wine of its kind can.\u003c\/p\u003e\n\u003cp\u003eMature now, with lemon curd, roasted nuts and toast over the stony, saline core, and acid that has held its line. Serve at 12 degrees, in big glasses, with air.
