Fruit for this one came off the sloping, close-planted block put in during 2007 — 10,000 vines a hectare, around 500 grams a vine, clones 777 and 114 in north-south rows below the Serré plateau. Seventy-five per cent whole bunches went into the ferment. Twelve months in barriques, a third of them new, were followed by another twelve in mature wood before bottling, and the bottles then rested in the estate’s cellar until the Hooper family judged them ready.\u003c\/p\u003e\n\u003cp\u003eFully in its window now: filigree in place of force, with dried cherry, forest floor and sweet spice over settled tannin. Serve at 15 degrees and drink it soon.
