The blend itself changes shape with the season: Shiraz lifts the fruit profile in cooler years, Pinot Noir takes that job in warmer ones. From a strong Victorian vintage, the 2017 settled at 82 per cent Cabernet Sauvignon, 11 per cent Shiraz and 7 per cent Merlot. Each variety fermented separately on wild yeast, then went to hogsheads with a fifth new for fifteen months, before racking, blending and bottling in May 2018.\u003c\/p\u003e\n\u003cp\u003eCool-climate Cabernet, so blackcurrant and bay leaf up front, then graphite, dried herbs and firm, fine tannin. Serve at 17 to 18 degrees, decanted.
