Almost all of it grew on the Winery Block, from vines planted in 1981, 1990 and 1996, with the Pinot off a 2004 planting. Each parcel was handled on its own, with partial whole-bunch fermentation and a carbonic component, then eighteen months in a mix of French barriques and hogsheads. Bottles like this get set aside by the Hooper family and released when the cellar says so, which is why the wine arrives already open for business.\u003c\/p\u003e\n\u003cp\u003eA wine that starts arguments at the table. Savoury and spicy, with brambly fruit, tea leaf, struck match and damp earth over chalky tannin. Serve at 17 degrees.
