The Bernard material was brought in by Lucas Grigsby and Matt Holmes to widen a clonal palette that began almost entirely with Penfolds selections. A small, clean crop in 2021 was whole-bunch pressed, settled overnight and racked to two second-use French hogsheads for a wild ferment; one barrel went through malolactic, and the wine sat eleven months on lees with barely any stirring.\u003c\/p\u003e\n\u003cp\u003eChalky tension is the signature here, with white peach and lemon pith in place of butter, and a saline, drawn-out finish. Serve at 12 to 13 degrees in a white Burgundy glass.
