Fruit was picked progressively through March, pressed as whole bunches, settled overnight and racked to stainless steel for a temperature-controlled wild ferment, then left three months on lees. The old vines behind it were planted in 1976 in the Olive Tree Hill block — own-rooted, low-yielding, at the top of a north-facing slope over ancient limestone — with a younger parcel planted in 2015 as an extension of the Winery Block.\u003c\/p\u003e\n\u003cp\u003eClassical and restrained, with citrus and white florals, fine structure, and a chalky finish that keeps going. Serve at 8 to 10 degrees.
