Michael Glover picked early and fermented wild in barriques, a third new and lightly toasted Tronçais, then left the wine on gross lees in puncheon for two full years and a third year on fine lees in tank.\u003c\/p\u003e\n\u003cp\u003eThree years on lees shows plainly: saline, mineral and taut, with citrus pith, ground spice and a long, austere line. Serve at 12 to 13 degrees and give it air.
