They are own-rooted, dry-grown and set over ancient marine sediment, which is the source of the salinity marking every release. The estate has made this wine in a consistent register for decades: whole-bunch pressing, wild fermentation in French hogsheads, and a long stretch on lees without stirring. Very little is done to interrupt the site.\u003c\/p\u003e\n\u003cp\u003eTaut and mineral in style, with citrus, white stone fruit and a saline edge over a long finish. Serve at 12 to 13 degrees in a white Burgundy glass.
