They are own-rooted and dry-grown, set over the ancient marine sediment that forms the bedrock through this part of the Moorabool Valley. The method here changes very little from year to year: whole-bunch pressing, a wild ferment in French hogsheads, and a long rest on lees without stirring, so the site and not the cellar sets the tone.\u003c\/p\u003e\n\u003cp\u003eNothing showy here: a mineral, tightly drawn Chardonnay, with citrus, white peach, struck match, and a saline finish that grips. Serve at 12 to 13 degrees.
