Their roots are well into the ancient marine sediment that forms the bedrock here, and they seem to draw the minerality straight out of it, giving a saline spine that carries the flavour and texture this label is known for. The 2021 was whole-bunch pressed to tank, then wild-fermented in Tronçais oak hogsheads with 30 per cent new, and left ten months on lees without stirring, with malolactic conversion running through 70 per cent of the blend.\u003c\/p\u003e\n\u003cp\u003eTightly drawn and long, with grapefruit, lemon curd, white peach, a struck-match edge and a saline finish. Serve at 12 to 13 degrees, decanted while it is young.
