Fruit came in over two passes in early March, was pressed as whole bunches and settled overnight, then fermented in French hogsheads with a third new; ten months on lees followed, unstirred, with 65 per cent malolactic conversion. The source is twelve rows of P58 planted in 1976, own-rooted, north-facing with east-west rows, centred in the plot, over ancient marine sediment. Organically farmed.\u003c\/p\u003e\n\u003cp\u003ePure, taut and linear, with deep-rooted power held in check: citrus, white stone fruit, a saline mineral wash and a long, steady finish. Serve at 12 to 13 degrees.
