Matt Holmes split the crop: a third was destemmed and lightly crushed, then fermented on skins for a week and finished in older puncheons, while the remainder went to tank as whole-bunch pressed juice. His versions of this wine sit lighter on their feet than the deep-set, heavily worked examples his predecessors made, without giving up the texture and savour that made the label unusual in the first place.\u003c\/p\u003e\n\u003cp\u003eNot a herbaceous style: think quince, pear skin, a little lanolin, and a chewy, phenolic finish. Serve at 10 to 12 degrees.
